It’s that time of year again that we get an overabundance of zucchini. I start to make everything zucchini this time of year! This is one of our favorites for the entire family and it is fast and simple to make.

Parmesan Crusted Fried Zucchini 
These fried, round zucchini bites are certainly tasty! These are a great tasty addition to your meals!

Instructions
  1. Slice zucchini into thin slices. 
  2. Whisk eggs in shallow bowl. 
  3. Mix dry ingredients into another shallow bowl. 
  4. Heat pan with olive oil on medium heat
  5. Coat zucchini rounds with egg mixture and then roll in dry ingredients to coat.
  6. Fry on medium heat for a few minutes until golden brown.
  7. Place on plate covered with paper towel to soak up excess oil. 
  8. Repeat steps until allzZucchini is used. 
  9. Enjoy dipped in your favorite dipping sauce!
