Bok Choy (also sometimes called Chinese Cabbage) is a cool weather vegetable that can be grown to harvest in spring and fall. It does not grow into a head and has beautiful large, dark green leaves.
How to Grow:
Bok Choy can be planted indoors 4-5 weeks before your last spring frost and then transplanted outdoors at 1-2 weeks before your last spring frost. Bok Choy seeds are planted 1/2 inch deep, 1 per square foot, in the full sun. Take care to notice what plants are around the area as well, see the companion plant section below. Bok Choy will sprout in about 5-10 days with consistent moisture.

Bok Choy is ready for harvesting in approximately 45-60 days. Make sure to harvest your Bok Choy before the heat sets in or else it will bolt to seed. Simply chop off the top of the plant and bring it into your kitchen to eat!
